The workshop will concentrate on 3 aspects of traditional food preparation which can nourish the gut, help with food allergies and chronic conditions as well as deliver tender, flavoursome food. Learn why many foods produced by industrial methods should be avoided, the fat facts that everyone should know (here's a clue- it's the opposite of what you might think!) and why some 'healthy' foods are making us ill...

*How slow food can help better digestion and assimilation of different nutrients
*How 'slow' food preparation methods feature in native cuisines around the world
*A discussion of soaking and fermenting for better gut health
*A cookery demonstration and tasting at the end of the session
